Pork chops smothered in diced tomatoes and onions.
Pork chops (your choice of cut)
1 can of DelMonte diced tomatoes (with or without green pepper and onion
1 medium onion
Cooking oil, butter or bacon grease
Salt, pepper, garlic (or seasonings of your choice)
How To Prepare:
Preheat oven to 400.
Brown chops in oil, butter or grease. Lay in a baking dish. It's ok to slightly over lap if necessary.
Salt and pepper
Slice onion and pop out into rings. Lay rings directly on top of chops.
Pour can of diced tomatoes on top of all. DO NOT DRAIN.
Cover tightly with aluminum foil (to seal in juices and keep chops moist)and bake at 400 for 45-55 min.

Carbs per serving - include all nutritional information if known:
About 9 carbs for the onion and 30 or so for the can of tomatoes. I use the onion and tomatoes only for cooking and remove (or keep to a minimum) from chops before eating. Carb count is minimal if this is done.
