Description: I made this on the fly when I went home for lunch today - extremely satisfying and one more reason why L/C rocks! You can do this with any type of beef or chicken. I happened to have a few hamburgers left over from our cookout yesterday so that was my meat of choice.
Ingredients: 1 hamburger patty
1 handful fresh baby spinach leaves

Ingredients for sauce:
1 cup sliced fresh mushrooms
2 Tb salted butter
1 Tb heavy cream
1 Tb cream cheese
1 Tb sour cream
2 Tb chicken broth
lots of freshly ground pepper
How To Prepare: In a small skillet heat the butter on medium high heat and add in mushrooms as soon as the butter starts to bubble. Saute the mushrooms for 3-5 minutes. Sprinkle with salt & some pepper while cooking. While that's cooking, microwave your pre-cooked hamburger for 2 mins and the place fresh spinach on top of patty. Return to microwave for 30 seconds to wilt the spinach. When done turn heat down to med low and add in chicken broth and cream cheese. Stir well and cook down a little. Add in cream and sour cream and cook down a bit more. Add lots of freshly ground pepper and pour over top of burger and spinach.
