4 Low carb tortilla shells
2 Pork hot links or other large link sausage
8 whole eggs
4 tbsp Calorie Countdown milk
small slice of fresh red pepper
small slice of fresh green pepper
small slice of fresh yellow onion
1/2 c shredded cheddar cheese
1/4 fresh tomato
How To Prepare:
Dice all fresh ingredients (peppers, tomato, onion)
In medium skillet melt butter over med heat
Add diced sausage and brown
In medium bowl with wire wisk beat eggs, diced peppers, tomato and onion, 1/4 c cheese and calorie countdown milk until mixed thoroughly
In separate skillet melt butter over medium high heat and add eggs
Scramble eggs and add cooked sausage
place each tortilla flat on foil or large baking sheet, use remaining 1/4 c of cheese and sprinkle each shell, use more cheese if needed. Only need to place in oven long enough to lightly brown shell and melt cheese, about 45 secs to 1 min. I keep door open and watch them.
Add serving of scrambled egg mixture to each shell and roll burrito style.
