A super fast chicken mini-meal with only six ingredients you can find at Trader Joes.

Ingredients:

3 oz. Trader Joe's Just Chicken Strips (Frozen)
1/4 cup diced zucchini
1/2 cup Trader Joe's Organic Chicken Broth
1 tbsp Trader Joe's Roasted Red Pepper Spread
2 tbsp Creme Fraiche
1 tsp Trader Joe's Pasta Seasoning Blend
Olive oil for the pan

How To Prepare:

In a medium frying pan on medium to high, heat the frozen chicken strips until the ice glaze has melted away. Add some olive oil to the pan and throw in the diced zucchini and sprinkle in the Pasta Seasoning Blend. Sautee until slightly browned. Add the chicken stock and let it cook until the chicken is fully defrosted and the stock has reduced a little. Stir in the red pepper spread and creme fraiche and cook for one minute. Let it stand a minute or two to thicken.
This dish is sweet and delicious and everything is pre-made. The carb total can be lowered to 5.5 if you use fresh chicken rather than TJ's Just Chicken Strips. To make this a full meal, use a whole, large chicken breast and there will still be plenty of sauce to make a good topping. If you are feeding a family that eats carbs you can increase the recipe and serve it over rice or pasta.
