A quick side steaming dish, high in fiber, calcium and other good things.
fresh broccoli -- 1 cup per person
How To Prepare:
On a day when you've fried some bacon --
Add a splash of water to the bacon grease -- just enough to cover the bottom of the pan about 1/16 inch.
Heat the pan while you chop fresh broccoli into bite size pieces -- florets and stalk slices.
When the water is boiling, add the stalk slices to the pan and cover. Cook for 2 minutes. Add the florets and cover. Steam for 4˝ minutes more.
Salt to taste and serve the steaming broccoli. (No need to add butter.)
