Description: Turn cauliflower into a chinese treat!
Ingredients: 1/2 small head cauliflower
1/2-1 small onion chunked (depends on how many carbs you want)
1-2 stalks of celery sliced diagonal
1-2 cloves minced garlic
2 scrambled eggs
cooked meat (shrimp, chicken, pork, beef) whatevers on hand
soy sauce
1-2 tbls. oyster sauce (secret weapon) optional
1 part sesame oil to 3 parts olive oil
2 green onions chopped
How To Prepare: Process cauliflower in food processor on pulse till it looks like rice. You don't want to put too much in processor at one time or the "rice" will get mushy.
Heat oil in pan. Can't give exact measurements since it depends on the amount of califlower. Just enough to coat bottom of pan. Add cauliflower,onion and celery, cook until tender crisp, add garlic, saute about 30 seconds. Add soy sauce then oyster sauce. Mix well. Push all to one side...add eggs to pan and cook, then break apart and incorporate into veggies. Add meat and heat throughly.
So many components of this can be adjusted to your personal taste. You can add mushrooms, bean sprouts etc......The oyster sauce is a little high in carbs (4 per tbls.) but if you plan for this it is worth it. I feel it's what gives it that full flavor................enjoy
