Family Recipe revamped Papa Jerry's Low Carb Mock Potato Salad

This recipe is one that has been handed down in my family for generations. Family and friends always request us to make it for get-togethers!! I decided to revamp it to make it more LC friendly!
1 cup mayonnaise
1/2 cup mustard
5 strips bacon--crispy
1 head of cauliflower
1/2 cup of granular Splenda
2-3 garden onions (any will do)
How To Prepare:
Cut up cauliflower into smaller sized pieces and put in boiling water. Leave for approx 8 minutes. Check with fork--they should be softer, but not enough to mush. Take out and blanch them under cold running water so that they do not continue cooking. Drain REALLY REALLY well.
Meanwhile, in a large bowl, combine mayonnaise, mustard, and splenda. Cut up onion into small pieces. Crumble bacon into small pieces. Cut hardboiled eggs into small pieces. Put all of it the bowl and mix well with mayo/mustard/splenda mixture.
Add cut up cauliflower and "turn"--being careful not to mix it too well because it will mush. Try to coat it all.
This is VERY basic but VERY good!!! Feel free to 'eyeball' the measurements--I never measure. I just know what I like!
