Description:

These muffins are a good breakfast muffin and are heart smart and health wize muffins... I love them.
They should be stored in the freezer... since they go stale quickly.

Ingredients:
|
6 Tbsp canola oil
3 large eggs
1/4 cup milk or soy
1/2 cup splenda or other sweetener
1 Tbsp maple extract
1 Tbsp vanilla extract
2 tsp cinnamon
1 tsp nutmeg
3/4 tsp baking powder
3/4 tsp baking soda
1 cup ground flaxseed
1/4 cup soy flour or other
1/2 cup chopped walnuts (optional)

How To Prepare:
|
Method: Mix together in a large bowl. Divide evenly into muffin pan sprayed with Pam.
Bake at 375F for 15 - 20 minutes. I like to use a toothpick to test the middle centers for firmness.
Nutritional Information: 1 muffin = 206 cal, 17g fat(6 grams of omega fatty acids), 10g carbs, 5g protein, 5g fibre.
3 Tbsp of flaxseed contains: 5g protein, 11 carbs, 10g "good" fat(omega fatty acids), 6g fibre.
