Ingredients:
|
2 boneless, skinless breasts flattened to 1/4"
shallots or green onions, minced (as much as u want)
1/2 stick butter + extra
1/2-3/4 c. heavy cream
salt & pepper
spinach, thawed and drained
pinch nutmeg
pinch garlic powder
1/8 c. pine nuts
olive oil
1/4 c. brandy or cognac
1 t. worcestershire sauce

How To Prepare:

S&p chicken. Put small amt of spinach at beginning of chicken, sprinkle with s& p, tiny bit of nutmeg and dab of butter. Roll up chicken tight and secure w/ toothpicks. In olive oil and butter, saute chicken on three sides. Take out. Put in pan with melted butter (just a little to keep from chicken sticking) in 375 oven for 20 min. Last 5-6 min. put nuts in separate pan and toast. When done, take chicken out and put on plate. Take pine nuts outs. In pan put 1/2 stick butter, add onions and saute few minutes. Add liquor and light (be careful, it will flame up quickly). Let burn off, then add cream, worcestershire. Add s&p to taste. Cook few minutes, do NOT boil, sauce will separate. Pour over chicken. Sprinkle with nuts. WONDERFUL!!
