Great texture, fantastic flavor and is not overwhelmingly "egg" tasting. I have had this recipe for years. I got it out of a now defunct low carb magazine back in 2002 or so.....I don't like "eggy" quiches and this really has awesome flavor and great texture!
8 oz. fresh sausage (turkey or pork, your choice)
2 Cups unpeeled zuchini, shredded
2 scallions sliced
1 tbsp.fresh basil, minced *
1 tsp. Italian seasoning *
4 large eggs
1/3 cup heavy cream
4 oz cream cheese cut into 1/2in cubes
1 Cup shredded Mozzarella cheese
1 Cup shredded sharp cheddar cheese
How To Prepare:
Preheat oven to 325 degrees.
Spray a 9 inch pie plate with cooking spray. (I used butter flavored Crisco).
Brown sausage, drain well and spread over the bottom of the pan. Top with shredded zucchini, then scallions, then seasonings.
Wisk eggs and cream slightly, then pour over the sausage mixture. Sprinkle cream cheese cubes on top, then mozzarella and cheddar. Bake 45 min. or until a knife inserted in the middle comes out clean. Serve warm.
**I subbed 1 1/2 tbsp Italian seasoning for this, total.
