Description: Great texture, fantastic flavor and is not overwhelmingly "egg" tasting. I have had this recipe for years. I got it out of a now defunct low carb magazine back in 2002 or so.....I don't like "eggy" quiches and this really has awesome flavor and great texture!
Ingredients: 8 oz. fresh sausage (turkey or pork, your choice)
2 Cups unpeeled zuchini, shredded
2 scallions sliced
1 tbsp.fresh basil, minced *
1 tsp. Italian seasoning *
4 large eggs
1/3 cup heavy cream
4 oz cream cheese cut into 1/2in cubes
1 Cup shredded Mozzarella cheese
1 Cup shredded sharp cheddar cheese
How To Prepare: Preheat oven to 325 degrees.

Spray a 9 inch pie plate with cooking spray. (I used butter flavored Crisco).

Brown sausage, drain well and spread over the bottom of the pan. Top with shredded zucchini, then scallions, then seasonings.

Wisk eggs and cream slightly, then pour over the sausage mixture. Sprinkle cream cheese cubes on top, then mozzarella and cheddar. Bake 45 min. or until a knife inserted in the middle comes out clean. Serve warm.

**I subbed 1 1/2 tbsp Italian seasoning for this, total.
Number of Servings: Serves six.
Carbs per serving - include all nutritional information if known: 4g carbs, 1 g fiber, 18gr. protein, 38gr fat, 435 calories.

Positive aspects of the product (pros): AWESOME!
Cons: NONE

I was sooo excited to see this recipe! i use to make it all the time, I had gotten it from the same LC magazine! We lost our home to a fire so the magazine was lost too! I DEARLY love this recipe! It freezes excellent, that is if you actually have any left over! The cream cheese makes it extra special! I served this for part of our dinner we had several years ago! A buffet style which was not all low carb, and it was liked by everyone!
Try it you will love it too!

Positive aspects of the product (pros): Wonderful taste and fill you up!
Cons: NOT A THING!

I have made this since that particular magazine was out! I have made it when I was not low carbing! JUST LOVE IT! Have made it for family gatherings and everyone loves it! Taste better when it has been put in the fridge overnight and heated again I think! TRY IT!
