Shrimp coated with and egg wash and shreaded coconut. I laid them on a bed of lettuce and baby spinach with a light vineagerette dressing. This is for a single serving. Nutritional values are for just the Shrimp. Enjoy
4 oz Frozen Cooked Shrimp (thawed and shells removed)
1/4 cup Fine Shreaded unsweetened Coconut
1 Tbs Parmeisian Cheese
Oil for frying I used 1-2 T coconut oil
salt/pepper to taste
How To Prepare:
In a bowl beat egg
Put shreaded coconut and cheese in another bowl
Put coconut oil or whatever oil you use in nonstick pan over medium heat.
Put shrimp in egg mixture, then a couple at a time dredge in shreaded coconut to cover. Put in frying pan and cook till brown and flip. Remove from pan and season with salt and pepper.
