Description: or as my boyfriend calls it, trashcan meatloaf. just a big ol' mess of low carb goodness!
Ingredients: 1 - 1.5 lbs raw hamburger
2 eggs
1/4 C low-carb bread crumbs (or crushed pork rinds)
1/4 C parmesan cheese
1/2 bell pepper, chopped
1/2 small onion, chopped
3 tbls worchestershire sauce
squirts of ketchup & mustard (i used heinz 1-carb ketchup)
spoonful of SF relish (optional)
1 small can mushrooms (optional)

1/4 C ketchup (or slightly less), 2 tbls worchestershire sauce, 2 spoonfuls brown sugar splenda, stir it up.
How To Prepare: stir up all the ingredients and shape into a loaf. spoon on the topping. bake at 350* for roughly one hour.
Number of Servings: 6
Carbs per serving - include all nutritional information if known: depends on the breadcrumbs... roughly 6 carbs per slice

Positive aspects of the product (pros): easy to make
Cons: needs to be doubled for regular loaf pan

I used the beef/veal/pork meatloaf ground meat mix from BJ's and the pork rinds variation for the breadcrumbs. Left out the peppers because I didn't have any. This was very good, I made it in my meatloaf pan that has a lower pan that catches the fat. I only used half the meat I purchased--I wished I had gone ahead and used the whole 3 pounds as this was a very short, but delicious, meatloaf.
