Pimento Cheese - This is a favorite everywhere I take it. I always am handing out the recipe. It is delicious if you like pimento cheese. Use with vegetables, i.e., celery, red pepper strips, radishes, cucumbers. You can also use as a dip with Pork Rinds
8 oz. cream cheese softened
8 oz. block sharp cheddar cheese - grated
1/2 cup mayonaise
4 oz. jar chopped pimentos (do not drain)
How To Prepare:
Grate the cheese (can use already grated but grated off the block imparts a better flavor)
Mix with softened cream cheese - add pimentos and mayo. Use your mixer to make nice and fluffy. Chill for a couple of hours to let the flavors blend.

Makes appx. 2 1/2 cups
