Here is a great substitute for cream of mushroom soup for use in casseroles. Can also be served as a side dish (with/on beef etc) and as a dip. Flavor is amazing!
GOURMET CREAM OF MUSHROOM SOUP SUBSTITUTE
2 T butter
6 ounces shiitake mushrooms, chopped
6 ounces oyster mushrooms, chopped
1 tsp fresh thyme (fresh makes a difference)
2-3 T chopped shallots
1/2 cup Marsala
1 cup heavy cream
salt and pepper
How To Prepare:
Melt butter in large fry pan over medium-high heat. Add mushrooms and thyme; sauté 10 minutes. Add shallots & sauté until mushrooms are tender.
Add Marsala and simmer until liquid nearly evaporated. Add cream and simmer until slightly thickened. Can be made ahead. Cover & chill.
