This is my first recipe submission. It's a delicious way to eat chicken breast and get some healthy green beans on the side. This recipe is written for 1 serving size. Could easily be doubled, etc...

Ingredients:
|
1 skinless, boneless chicken breast
2 Tbsp unsalted butter
1 c. frozen green beans
Kosher salt
Course ground black pepper
Rosemary - fresh or dried
|

How To Prepare:
|
Heat cast iron skillet over medium-high heat. Place chicken breast between two sheets of waxed paper or saran wrap. Pound until 1/4-1/2" thin and even. Season both sides of chicken with salt, pepper and rosemary (as much as desired).
Melt butter in hot skillet, place chicken in skillet. Don't let butter melt for too long or it will burn.
Meanwhile, place green beans in a microwavable container and cook on high for 3 1/2 minutes with several tablespoons of water.
Turn chicken when golden brown. Cook through. Place chicken and green beans on plate and drizzle herb butter/pan juices over green beans.
***Another option is to sprinkle the chicken with parmesan/romano cheese blend and place under broiler for 2 minutes until cheese is melted.
