Description: I needed something different and combined several recipes with things I had on hand. This is creamy and very filling! It can easily be altered for one breast or four, I made it with three.
Ingredients: 3 boneless, skinless chicken breasts
3 (long side of block) 1/4 in slices of cream cheese
1 scallion, diced
A few black olives diced (opt)
3 to 6 slices bacon, raw
1/2 t lemon juice (opt)
dash salt and pepper
1/2 c mayo
1/2 c chicken broth
1 or 2 chicken bouillion cubes, grated
How To Prepare: *Pound chicken pretty thin with a mallet or even a flat can.


*Sprinkle each with salt and pepper
*Place one slice cream cheese on the widest area of one chicken breast, sprinkle with 1/3 of scallion and black olives, roll up. Wrap with one or two slices of bacon, your choice. Secure end with toothpick. Repeat with other breasts. Place all in a baking dish.
*In a bowl, combine mayo and broth very well, add grated bouillion and mix. Pour over chicken.
*Bake at 350 for about 30 to 45 min. Serve with sauce spooned over the top.
