A cheesy crustless quich with loads of flavor.
Refrigerates for several days. Microwaving, retains flavor and consistancy. Super easy.
Everyone I have made this for raves!
1 pint of cottage cheese
8 oz shredded Monterey Jack cheese
4 oz can diced green chilis
1/2 c flour (I have used the Atkins Baking Mix, also, which was just as good)
1 tsp baking powder
1 stick of butter
How To Prepare:
Pre heat oven to 400 degrees.
While pre heating, place a stick of butter in a 13x9 casserole, to melt.
In a bowl, crack 10 eggs and whip up.
Add all other ingrediants, except butter, and mix with a large fork, spoon, whatever.
Once butter is melted, tilt the casserole to coat the bottom, and pour the butter over the egg mixture. Briefly stir and pour all into the casserole. Bake at 400 for 15 minutes, then turn down to 350, and continue to bake for 35 min.
