1/4 c. arrowroot powder
stevia to preference
1/2 c. lemon juice
1/2 c. water
1 tsp. grated lemon
2 egg whites
1/2 pint heavy cream
How To Prepare:
Cook arrowroot and stevia over low heat; add lemon juice and water. Whisk until smooth. Cook over medium heat until thick 6 min. Take from heat, and cool. Add grated lemon. Beat egg whites until stiff. Fold whites into lemon mixture. Cover with saran wrap and chill. Beat heavy cream until stiff peaks and fold in to make mousse. Refrigerate until ready to serve.
