Description: Once you start eating this delicious Low Carb Pumpkin Pie, you'll want a piece every day.
Ingredients: 1 envelope Knox Gelatin
1/2 c. brown sugar
1 c. boiling water
2 8oz. cream cheese (1 neufchatel/1 regular)
1 tsp. vanilla extract
1 tsp. pumpkin pie spice
1 c. canned pumpkin

crust: (optional)
1/2 stick melted butter
9 crushed ginger snaps
handful pecans
How To Prepare: Melt butter. Process ginger snaps and pecans in food processor. Blend together, and press into pie plate. Mix Knox with brown sugar. Let set. Beat softened cream cheese, vanilla, and pumpkin. Beat in gelatin mixture. Fill crust if using crust. Chill pie about 3 hours. Serve with whipped cream.
