Great for taking to pitch-ins
5 cups diced chicken, cooked
5 cups chopped celery (optional)
1 bunches green onions
4 ounces chopped green chilies
1 small can pitted ripe olive, drained and sliced
1 cups slivered almonds (optional)
10 ounces shredded cheddar cheese - divided
1-cup sour cream (8 oz)
2.5 cups pork rinds
How To Prepare:
Combine the first six ingredients.
Add 1 cup of cheese. Mix mayo and sour cream; add to chicken mixture and toss. Spoon into two greased 13-in. x 9-in. x 2-in. baking dishes. Sprinkle with pork rinds. Top with remaining cheese. Bake, uncovered, at 350 for 20-25 minutes or until hot.
