Description:

Creamy and delicious soup. Comforting on those chilly nights. If you want it spicier, add a little chopped jalapeno or red pepper.

Ingredients:
|
1 cup broccoli flowerets
2 slices bacon, cooked and crumbled (real bacon bits are fine to use)
1 Tbls. onion, chopped
2 slices Chipotle Cheddar cheese (2 oz.)
1/4 cup heavy cream
3/4 tsp. xanthan gum
1 cup water
1.5 tsp. chicken boullion granules (I use Maggi ... excellent flavor)

How To Prepare:

I put the broccoli, onions, bacon, boullion and water in my magic bullet (I'm sure any blender will do the trick) and whirl until all is chopped very fine. Put into small pot on stove. Since everything is chopped so fine, it doesn't take long to cook. I cooked maybe 5 minutes. Stir in cheese and stir until well blended. (or you could put it all back in blender and whir). Add cream. Sprinkle in the xanthan gum and stir briskly until well blended. Now eat it up! 
If you want to make it even lower in carbs, just add 1 cup cooked chix, chopped to the prepared soup and heat it up. Then it will make 3 cups.
