DELICIOUS! When I ate this, I was in heaven! Before I knew it I had eaten half the casserole!!! .... okay I am supposed to be honest ... I knew what I was doing. After 1 lg serving, I knew I shouldn't have more ... should wait and have a chix breast and a small salad at dinner .... but I kept being drawn to it. I would get just a tbls. of it ... then another tbls. .... then another. By the time I was done ... half of it was gone. :-( I try to have restraint ... I really do. I may just be rationalizing, but I told myself it was better than pigging out on doughnuts or potatoes or some other deadly food.

Ingredients:

4 whole lg. eggs
1/2 cup heavy cream
4 - 6 oz shredded cheese (I prefer the 4 cheese blend)
1 can spinach - drained (I believe that is about 1.5 cups ... I forgot to measure it)
2 oz. real bacon bits
black pepper (optional)

How To Prepare:

I beat the eggs and cream together, and poured into a 2-qt casserole dish. I then stirred the other ingredients. Cooked at 325 degrees for about 35 minutes.
