A Yummy Chile Rellenos recipe without all the carbs!
1 lb ground beef or shredded chicken breast
1/2 onion, chopped
seasonings: salt, pepper, garlic powder, and Tabasco's new chipotle sauce, to taste
2 1/2 c shredded cheese
2 (7 oz) cans whole green chilis
1 1/2 cup cream
How To Prepare:
Preheat oven to 350 degrees. Spray a 8" or 9" square pan with nonstick spray. Brown hamburger/chicken with onion, drain. Add seasonings. Slice open chilis and arrange half of them in pan. Top with half of the cheese and all of the meat mixture. Place remaining chiles and cheese over the meat. Beat eggs and cream together with a fork and pour over casserole.
Bake uncovered for 45-50 minutes. Serve with salsa or picante sauce.
