Nice kick in the butt to wake you up in the mornings or eat for lunch or dinner with a salad. Leftovers warm up well in the microwave.
1 lb. ground hamburger, browned and drained
10-12 fresh jalapenos, seeded, deveined, and chopped
2 cups grated cojack cheese
3 eggs, beaten
salt and pepper to taste
sour cream to taste
How To Prepare:
Preheat oven to 375'. Lightly grease 9" pie plate. Layer hamburger, jalapenos, cheese, then eggs that have been seasoned with salt and pepper. Bake for about 20 minutes. Cool slightly. Dollop with sour cream and enjoy.
