Apple Cabbage Salad
1 cup shredded cabbage
1 small Gala or Granny Smith apple, cubed
1 stalk celery, chopped
1 small green onion, chopped, optional
1 tsp fresh lemon juice
1 tsp lemon or orange zest (more if desired)
1 tsp lite mayo (yes, that's really all you need!)
Optional spices: Mrs. Dash, pepper, celery seed, salt, whatever else that you wish, to taste
How To Prepare:
Squeeze lemon juice over apple to preserve color, then mix all ingredients together and enjoy! Can use prepared shredded cabbage. Can be refrigerated. I usually make a larger batch than this single serving one, then have it during the week. It refrigerates well for 3-4 days. Nice flavor and simple to make! The original recipe called for much more mayo and also mandarin oranges. I decreased the mayo and skipped the canned oranges. This is a great salad... simple, filling, crunchy and naturally sweet, and very little fat! Enjoy!
