Just as delicious as a potatoe!
1 sweet onion (i prefer vadilia)
1/2 stick butter
2-3 teaspoons garlic powder
1 T Soy Flour
1 T Wheat Flour
How To Prepare:
Peel Zucchini. Grate Zucchini and place in colander to dry for about 1/2 hour. I pat dry as best i can with paper towels.
In micro, melt 1/2 stick of butter w/chopped onion for about 3 minutes. Mix grated, dried zucchini with garlic, butter, onion and the 1 T Soy and 1 T wheat (i guess you could use any low carb mixture). Place pancakes on a sprayed cookie sheet. Bake at 450 about 20- 25 minutes.
Number of Servings:
6 pancakes, depending on size of Zucchini
