Description: Sun-dried tomatos, artichokes and goat cheese dish.
Ingredients: One package of sun-dried tomatoes, softned.
One can plain artichokes, rinsed, drained, and chopped.
Two tablespoons of olive oil.
3/4 tablespoon dried basil (or eqiv. fresh)
1 tablespoon red wine vinegar.
1 garlic clove, minced.
1 small package crumbled goat cheese.
How To Prepare: In a medium bowl, I use tupperware, Soften pkg of sun dried tomatos in warm water. I like to buy the ones already cut up. After they are rehydrated, drain. Add the artichokes. I just cut them with fingers. I usually don't use 2 of the artichokes. Add olive oil,red wine vinegar, garlic, and basil. Mix well. Then add in the goat cheese. Refridgerate. I have this next to my steak. It makes a great combination. I use it when I don't feel like another green salad.
