Description: This frittata tastes just like a pizza. My hubby went nuts over it! You can add whatever pizza toppings you like. Either mix them into the eggs, if you want them softer, or sprinkle them on top if you like them cooked well.

Very good for breakfast, lunch OR dinner!
Ingredients: Sliced Muenster cheese, enough to cover the bottom of a 9” pie dish, approx. 6 slices.
4 oz. cream cheese, softened
2 eggs
1/3 cup grated Parmesan
1 teaspoon Italian seasoning
Salt and Pepper to taste
Garlic powder to taste
Red Pepper flakes to taste (about ¼ teaspoon)
¼ - ½ chopped onion (optional)
1 14 oz. can Italian Style Recipe cut tomatoes (that’s a generic store brand) – diced peeled tomatoes in juice with basil & oregano
Tabasco to taste (optional)
½ cup Shredded mozzarella (or more – to taste)
Pizza toppings: chopped pepperoni, crumbled sausage, peppers, mushrooms, etc.
How To Prepare: Preheat oven to 350°

Line the bottom of a 9” pie dish with Muenster cheese, covering the sides of the dish as well. In a separate dish, mix cream cheese with eggs, Parmesan, Italian seasoning, salt, pepper, garlic powder, red pepper flakes (can use a blender to pulverize everything). Stir in onions and/or any other veggies you’d like. Pour egg mixture into pie dish. Bake for 15 minutes to set the eggs.

While the dish is cooking, prepare the sauce: Drain the tomatoes. Add more Italian seasonings or Tabasco to give the sauce more kick. Blend if you don’t want like chunks of tomato.

Remove dish from oven and spoon tomato sauce over top (you don’t need to use all the sauce, ¾ can is probably sufficient). Sprinkle mozzarella on top. Cover with desired pizza toppings. Bake for another 20 minutes with a larger pan underneath in case it drips. Let cool a few minutes before serving.

Note: chop the toppings such as pepperoni so the frittata is easier to slice.
