This is a great recipe that I took from a crock-pot cooking book and altered for my low-carb lifestyle.
1 lb ground beef(or chicken!)
1 jalepeno pepper(seed it for milder flavor), chopped
1 green onion, chopped
2 T. Taco sauce(taco bell brand is lower carbs)
4 low carb wraps(the ones I use are 4 per wrap)
2 cups shredded cheese(look on the back--alot of these have ZERO carbs!)
1 small can Enchillada sauce
How To Prepare:
Brown meat in a skillet with the onion and pepper. Drain. Add mixture to wraps, sprinkle with 1 c. cheese for all 4 wraps and roll. Pour two-thirds a can of the sauce on the bottom of your crock pot and place wrapped enchilladas, seam side down, in the sauce. Top with cheese, remaining sauce and any remaining meat you may have left over. Cover and cook low for 4 hours. Serve with a dollop of sour cream and enjoy!
