this is great for something a little different for those mornings when you don't want to eat first thing...it is also a great way to use your left overs, from a taco salad or a low carb wrap.`
2 to 3 eggs
spiced taco meat (ground turkey or beef or both, shredded chicken would be a good choice also)
ranch dressing (optional)
sour cream (optional)
How To Prepare:
1)add butter to your pan
2)pour in your beaten eggs cook to your liking
3)add as much taco meat (heated) as you would like on 1/2 of the omelet and add cheese fold
4)add more cheese on top if desired, veggies and top with salsa, sour cream, or ranch dressing.
