2 Large Zucchini
1 large onion
1/4 cup heavy cream
1/4 c grated pamesan
3 tbsp olive oil
salt and pepper
How To Prepare:
This recipe is an old italian favorite, and is very delicious and simple the way it is. So dont go adding anything to it! Pour olive oil in lage non-stick skillet. Chop onion and sautee until starts to turn soft. Chop zucchini in about 1/2 inch chunks, and add to skillet. Sautee until soft. Whisk eggs and cream together in a bowl. Add remaining ingredients. Whisk well. Pour over veggies. Use a spatula to mix around until it starts to thicken and patially cooked. Flatten all aound in skillet. Get another skillet, coat with olive oil, and flip fittata into other skillet to cook the other side. If you dont have another skillet, you can slide it out onto a plate, then put the skillet on top of the plate and flip.
