1 lb bacon, cut into 1/2 inch strips (use kitchen shears or partially freeze and use a sharp knife)
1/2 cup chopped green onions
1/2 cup balsamic vinegar
10-12 packets splenda (to taste)
salt and pepper
8 Hard boiled eggs - chopped
1/2 cup Crumbled blue cheese
1/2 cup Sliced mushrooms
1 large bag fresh spinach
How To Prepare:
Cook bacon until crisp, remove bacon to a bowl. Sauté green onions in bacon grease till tender. Remove from heat, add vinegar slowly. Add sweetener and salt and pepper to taste. Return bacon to dressing and reheat if necessary.
If serving a large crowd, place spinach in a large bowl. Toss with dressing. Add eggs, blue cheese and mushrooms and toss lightly. Lots of the good stuff falls to the bottom of the bowl.
For single servings, add dressing for individual serving. Dressing can be reheated in microwave as needed. Make a double batch and it will save time in the future.
