Description: Fried potatoe skins using real potatoe skins.
Ingredients: About 5 med size potatoes
Oil for frying
Onion Salt
Pepper
How To Prepare: Wash the potatoes first and cut out any bad spots.


Use a vegtable peeler to peel the potatoes. (Make sure the potatoes you are using aren't green).


Put a couple tablespoons of oil in pan and when its hot put the skins in.


Sprinkle them with the onion salt and pepper.(to taste)


Fry them on med to med hi til they are crispy on the edges.


Cooking time varies but it usually takes me about 5 to 7 min.


Optional...while still hot sprinkle a little shredded cheese on them. Use garlic salt if prefered.


Serve with low carb ketchup or sour cream.


Note: Potatoe skins themselves have 0 carbs but you can't help getting a little potatoe too. I usually peel a few that are mostly potatoe. Just don't get carried away.


I make these when I'm making mashed potatoes for
the non lo carbers in the family.
I have also saved the skins in the refrigerator for a couple days in a baggie. They turn a little dark but they don't taste any different when fried.
Number of Servings: 2 small or one large
Carbs per serving - include all nutritional information if known: Depends on how much real potatoe is added. I usually count 2-3 small or 5-6 for large.
Preparation Time: 2 to 3 min.
