Description: Wonderful when the weather is cold!





I usually skip browning the meat and just put everything in the slow cooker to work.
Ingredients: 1 pound beef, cut into 3/4 inch strips (use a cheap cut, I’ve used chuck, stew meat, round steak and london broil, depending on what’s on hand)
2 cloves garlic, minced
1 ½ c. beef broth
½ can (3 oz.) Tomato paste
2 Tbsp. Red wine vinegar
1 tsp. Molasses
2 tsp. Splenda
½ tsp. Cinnamon
1/4 tsp. Allspice
1/4 tsp. Cloves
1/8 tsp. Black Pepper
1 Bay leaf
2 chayote squash, peeled and cut into chunks
½ c. onion
8 ounces mushrooms, quartered
1 c. sweet green pepper strips
How To Prepare: Brown meat in olive oil. Put all ingredients in slow cooker sprayed with cooking spray. Cook on high for 3-4 hours or on medium all day. Remove bay leaf and serve.



I don't know about the new slow cookers but I have put this in before work and come home to find dinner ready.


I usually freeze the other half of the tomato paste to use another time.


The chayote worked out fine as a replacement for potatoes. To me they are very bland and have no off taste. They were very tender, like a firm potato piece.
