A basic frittata recipe that is easily adaptable for lots of leftovers!
1/4 lb. butter
2 cups shredded cheese
1 to 2 cups chopped or shredded meat
1 cup heavy cream (no additives)
Seasonings to taste
How To Prepare:
Preheat oven to 375┬║. Melt butter and coat bottom and sides of pie plate. Layer bottom of plate with cheese, then meat. Whisk together eggs and cream until well blended. Add spices. Pour over meat and cheese. Bake for 40 minutes. Allow to rest for at least 10 minutes before cutting.
I often make this with crumbled bacon and shredded Swiss or Cheddar, just adding black pepper. I also make it with leftover chicken and sharp Cheddar with chili powder and cumin. Ground beef and mozzarella with Italian seasonings also works. Replace the meat with spinach and/or broccoli for a meatless dish. too. The possibilities are endless.
