This recipe is something different for everyone who likes something other than scrambled boiled or fried for their eggs. It's a sweet addition to our morning ritual. This recipe is also great for induction.
Melt butter in skillet on med/low heat.
In a small bowl beat egg and half the packet of Splenda. In another small bowl combine cream cheese, vanilla and the other half of the packet of Splenda. When ingredients are ready and the butter is melted start by pouring the egg mixture into the pan. IMPORTANT: DO NOT STIR THE EGG....when egg is heated through softly spread the cream cheese mixture on the egg.... Roll egg up to form a crepe.... place on a plate... you can enjoy this topped with any Sugar Free Jelly or just by itself...add a bit of cinnamon for more of a french toast flavor.
