Blackened Pork Chops w/ veggies cooked in butter with some very nice bold flavors. This is to die for. I just came up with this tonight! Low carb! Great for induction! And fab!

Ingredients:
|
3 Lean Center Cut Pork chops
3/4 Med sized bell pepper
1/2 onion
big handful of fresh mushrooms
1/2 teaspoon salt
1 tbsn Zatarain's Blackened Seasoning

1 teaspoon garlic powder
1 1/4 tspn Mrs. Dash "Table Blend" seasoning
3 tbsn butter
another 3 tbsn butter separate
pepper
cast iron skillet

How To Prepare:

First thing you need to do is slice the bell pepper and onion in fairly large-bitesize pieces. Then put salt, Zatarain's Blackened Seasoning, and garlic powder on the pork chops. Ok, now what you want to do is get that pan super hot by letting it sit on a high fire for a bit. About 8-10 minutes. Take your 3 tbsn butter and toss it in there. Let it melt for a sec and put the pork chops in the pan. Get 'em real dark on both sides. I'm guessing this takes about 7-8 minutes. Then just let 'em sit on that fire and toss in the veggies. Take the other 3 tbsn of butter, about a teaspoon of garlic, and the Mrs.Dash and drizzle all over the veggies. Trying not to super saturate the chops with it. They have already developed their own flavor. So After you do that you take the entire pan and you put it in the oven on 350 for about 20-25 minutes, but no longer. Those veggies are perfect at about 20....
I served this with a half a cup of sliced cucumber that was tossed with vinegar and salt before it made it to my plate. And from Linda's website the "Pumpkin Custard." What a wonderful meal it was. I think I'm gonna fry some eggs into my leftovers tomorrow morning.
