Full Flavored Low Carb Favorites Ham and Cheese Quiche

I love quiche! You can put everything but the kitchen sink in and they still taste great! This quiche is light yet very filling. If your on Atkins, you can substitute half and half for skim milk, for a richer flavor.
Ham and Cheese Quiche
2 tablespoons butter
1 pearl onion, minced
1 clove garlic, minced
5 large eggs
1 cup skim milk
1 cup cooked ham, diced
6 oz. cheese, grated (swiss, cheddar or blend of both)
dash nutmeg, ground
salt & pepper
How To Prepare:
Preheat oven to 350^. Melt butter in a small skillet over medium heat. Add onion and
garlic, sautee for 3 minutes. Remove from heat and set aside.
In a medium mixing bowl, whisk eggs and milk together. Grease a 9" pie pan. Add
the onion-garlic mixture to the bottom layer of pan, followed by ham and sprinkle
cheese over top. Pour egg mixture over top and sprinkle with nutmeg, salt and
pepper. Bake for 35-40 minutes, or until a knife comes out of the center clean. Allow
to sit 5 minutes prior to cutting.

Positive aspects of the product (pros):
used cream & Half & Half instead of milk
Instead of pearl onion, used 1/2 chopped leek. Added same amount of chopped green pepper. Used 6 eggs for a 10" pie plate and substituted 1/2 cup cream & 1/2 cup Half & Half for milk to make it more low carb. Did not use nutmeg. Sliced a plum tomato on top with shaved parmesan cheese. Hubby was doubtful at first, but really like it.
