Full Flavored Low Carb Favorites Arugula with Roasted Pepper Salad

Not your typical plate of greens! This salad is crisp and delicious. Serve this at your next dinner party-Your friends will be so impressed ! Takes only minutes to prepare.
1/2 small jar roasted red peppers, drained
1 medium cucumber, julienned or sliced
4 cups arugula, loosely packed
1 small carrot, julienned or grated
1/4 c. balsamic vinegar
1 tsp. basil, dried
1/4 c. olive oil
1 small clove garlic, minced
dash of salt and pepper
1 tsp. mustard
pinch of brown sugar (optional)
How To Prepare:
Drain and chop roasted peppers. Set aside. Wash and peel cucumber and carrot.
Slice cucumber into quarters and slice off seeds, creating a flat surface. Julienne by
slicing quarters into thin strips and slice strips into match sticks. Repeat for carrot. (If
making ahead, place cucumbers into ice water and chill).
Just prior to serving, toss arugula, vegetables and add enough dressing to lightly
