This delicious soup is elegant enough to serve at any formal dinner party, yet simple enough for your family on a chilly weeknight.
|

Ingredients:
|
2tsp.oliveoil 2 tsp. white pepper
2 large yellow onions, thinly sliced
1 tsp. garlic powder
2 small cans beef broth (low sodium)
1/8 tsp. nutmeg, ground
3c.water 6 slices low carb bread
1/4 c. red wine
2 c. Gruyere cheese, grated

How To Prepare:
|
In a large soup pot, heat olive oil over med-high heat. Add onions and sautee until translucent, about 5 minutes. Add remaining ingredients (except bread and cheese) and stir. Cover soup and reduce heat to medium. Simmer for 1 hour, stirring occasionally.
Toast low carb bread in toaster or broiler. Ladle hot soup into oven safe soupbowls. Top each bowl with a slice of toasted bread. Sprinkle 1/3 cup of gruyere cheese over each slice of bread. Place a large, sturdy baking sheet into oven.
Place soup bowls onto baking sheet and broil for 5 minutes, or until cheese is brown and melted on top. Serve immediately.
