Description:	This makes a rich, creamy cheesy dish that is just the ticket, even if you are not on low carb.
Ingredients:	1/2 box Dreamfields Pasta, Penne Shape (holds the most cheese) 2 cups shredded Sharp Cheddar 1/3 cup shredded or grated Parmesan 4 oz. Brie (about 1/2 of a large triangle) 1/2 stick butter Tabasco Sauce (optional but highly recommended)
How To Prepare:	Boil 1/2 box of Dreamfields Penne for 12 min in salted water. While pasta is cooking, cut crusts off the Brie, cut into 1 inch cubes. Drain pasta, return immediately to pan. Stir in 1/2 stick (1/4 cup) butter until completely melted. Stir in brie cubes until melting. Sprinkle in parmesan, add cheddar cheese then stir until the cheddar completely melts and the sauce forms a creamy consistency. Keep stirring! Returning the pan to the burner you shut off helps it get done faster. Add dashes of Tabasco to taste, I put about 5 big shakes. Add 4-5 grinds of pepper. If you don\'t use Tabasco, you may want to add 2 tsp of cream or half and half to thin it out just a tad. Welcome to macNcheese heaven! WARNING - This whole batch equals about 28.4 carbs. Make sure there is someone else there to eat the other half, or you will blow your diet! Go light the first time until you see if the pasta affects your ketosis. Technically it\'s only 5 carbs per serving and that holds true for me. The brie is important for flavor and consistency (and only .1 carb per oz), don\'t sub!

This is AWESOME! Made the following changes: followed recipe for the most part but after pasta was drained, stirred in the butter, plus about 1/2 cup cream and one beaten egg. Then tossed in cheese, and shoved whole thing in oven with a few pork rinds crumbled up on top for about 25 minutes at 350. YUM! I have had great mac and cheese, but the blend of cheeses in this one is truly the best.

Cons:	Ingredients a little pricey (but worth it!)

This is an excellent recipe! Next time I will be braver and try the Tabasco sauce - chickened out cause we don't like really spicy stuff. Did add quite a few splashes of cream to thin it out. Was really, really delicious!!

Very tasty! I put some crumbled bacon on top for a little cruch. Really great texture contrast with the creamy mac and cheese. I used the Dreamfield elbow macaroni because I didn't have penne - turned out pretty well.

Cons:	not enough pasta for the amount of chees

i would cut down on the cheddar cheese next time and add some cream. The brie really made this receipe.
