A high fibre, low carb something to spread your butter on
300g flaxmeal (golden gives a nicer colour)
2 tsp baking powder
1.5 tsp cinnamon
50g melted butter
How To Prepare:
Preheat oven to 185 degrees centigrade (about 350 F)
Line a 2lb loaf tin with non stick parchment or liner Combine all ingredients in a bowl and mix thoroughly. Pour into loaf tin and smooth off.
Place in oven as quickly as possible as baking powder begins to work as soon as it gets wet. Bake for approx 45 mins. Check for done ness, give it a few more mins if necessary. When done leave to cool for a few mins and then cut into 12 even slices. Serve with butter or toast lightly to go with an egg. Please note do not subtract fibre from total carbs. This is a UK recipe and the fibre has already been deducted.
