Amazingly good tofu dessert. No one will know it's tofu! You can experiment with spices and flavors and if you don't care about fat... add cream but I count calories and fat so this is the skinny version. I actually buy "lite" tofu to cut back on fat and calories and it still comes out very creamy and yummy.
2 pkgs of silken tofu
1/3 cup of unsweetened cocoa powder
1 cup of nonfat cottage cheese / ricotta cheese
Equivalent of 1 cup of sugar (25 drops of liquid splenda)
salt to taste (I like a lot of salt)
Da Vinci syrup of choice
instant coffee grounds,
How To Prepare:
Liquify all of the above in a blender.
Put in individual serving cups
I like to pop them in the freezer for 1/2 hour before eating them so they are starting to frost around the edges.
I also recommend Nancy's Cultured Cottage Cheese if you can find it since it adds a nice yogurty zing and has only 3 carbs per serving.
