these were the best low carb sausage balls ive made yet, and i've made about 4 other recipes before getting the carbquick!!!!! My hubby is very picky and he liked these as well or better than the high carb version!

Ingredients:
|
2lbs spicy sausage (you can use mild)
2 cups of Carbquick
3 cups of Chedder Cheese (i use the preshredded, its drier, produces less grease)
1/4-1/2 cup of very finely chopped onion (depending on taste, i used half a small onion)
1/4-1/2 of cream to help the carbquick form with the meat
OPTIONAL 1/2 tsp of garlic and 1/2 tsp of cayenne (if not using spicy sausage)

How To Prepare:

knead the mess out of this! Took me about 15 minutes of pounding folding squishing and kneading to mix it all up.
If you use the spicy sausage you wont need other spices, but i added 1/2tsp of garlic and 1/2 tsp of cayenne pepper to mine since i used mild.
Make little balls about a heaping tsp of raw mixture...not much bigger than an inch across
cook 350 for 15 minutes, or until golden brown.
makes about 75 sausage balls, about .75 carbs per ball.
I made about a dozen for myself and hubby for lunch and froze the rest raw in a single layer in zip lock baggies to cook later.
