I'm not even a salmon fan but I love it when it is prepared like this! This recipe works great with other meaty and dense types of fish, too!
For presentation, you can prepare individual portions in mini-casserole dishes. You'll make this again and again... it's fantastic!

Ingredients:

SALMON with DIJON DILL SAUCE
(Serves 4)
1 1/2 lbs salmon fillet (or any other other dense fish)
1 cup sour cream
2 tablespoons dijon mustard
3 tablespoons fresh dill, chopped (or 1tablespoon dry dill)
3 tablespoons red onion, chopped fine
Salt, pepper to taste
Garlic powder to taste
Olive oil or cooking spray

How To Prepare:

Mix sour cream, mustard, dill, onion, salt and pepper to taste in a bowl and let stand at room temperature for one hour. Preheat oven to 400 degrees. Sprinkle bottom of a glass baking dish with olive oil (or coat with cooking spray-- you may use a foil lined cookie sheet if your piece of salmon is too large for your baking dish). Place the salmon in the dish skin side down. Sprinkle top of it with salt, pepper, and garlic powder to taste. Take 1/3 cup of the sour cream mixture and spread it on top of the salmon. Bake for 20 minutes or until salmon is pink. Serve with additional sauce on the side.
