Description: This is a great cold soup recipe. It tastes rich and smooth and is a beautiful sea foam green color. It holds up very well in the refrigerator so it can be made ahead. It looks perfect the next day and tastes even a little better.
Ingredients: 1 large avocado, peeled, seeded and cubed
1 ½ cups chicken broth
1 clove garlic, crushed
Generous dash Tabasco sauce
1 ½ cups cream
Salt to taste
Chopped chives or parsley for garnish
How To Prepare: Place the avocado chunks, chicken broth, crushed garlic, and Tabasco sauce in a blender or food processor. Cover and blend on high speed until ingredients are thoroughly pureed. Add cream. Cover and blend a few additional seconds. If the mixture is too thick, thin with a little cream or broth. Correct seasonings, adding more Tabasco sauce and a pinch of salt to taste. Serve well chilled. Garnish with chopped chives or parsley.
