I needed to add a little extra splenda to the frosting to make it sweet enough, but that's nothing major.

I made the recipe for my daughter, who's a pumpkin addict. It tastes almost like a spice bread type thing, and we all enjoyed it. I am making it again since I'm craving something sweet.

I had it warm out of the oven and without the frosting. It was great tasting. A nice change from eating pumpkin pie/cheesecake. I'm sure it will be even better with frosting.

I, too, made slight alterations. First, I used 1/2 cup of carbquick and 1/2 cup of protein powder (BSN lean dessert- vanilla). I also just used pumpkin pie spice instead of all the separate ones- I used about 1 1/2 tbsp. I also cut down the splenda to 1/2 cup. It was plenty sweet. I currently live in a hotel, so I am using a convection oven. I made muffins and put them in at 350 degrees for almost 45 minutes. They came out moist, fluffy, and wonderful!! They ended up being 2.85 carbs per muffin (I made 14) with 4.2 grams of protein each. Next time I'll add in some extra protein.
