This is a really popular dessert in china called Hun Yun Dou Fu (almond tofu) and its basically like an almond flavored jello -- but you use agar to make it stiffer! It is 0 carbs and 0 calories and unlike jello, because agar is a fiber, it kind of fills you up better!
Agar Agar powder (i use about 10grams) or the stringed raw form
Water (several cups)
Sweetener (i use sucralose)
How To Prepare:
start about 2 cups water boiling -- add agar BEFORE boiling otherwise it will clump up!! add almond flavoring and sweetner to taste (depends on strength of flavoring and sweetner, i use a couple drops of almond stuff and 1/2 tsp of sucralose). then once its boiling, QUICKLY shut off the heat -- it will boil over and this will make you mad because its not fun to clean!! then pour into plastic container.......
now here's the trick to cooling it faster... when i boiled i deliberately put only just enough water to let the agar dissolve -- if i just let it cool now, it'd be very very firm....so before it cools, pour in an equivalent amount of cold water (about 2 cups) and this will drop the temperature quicker (you should mess around with the amount of water -- too much and it will not be firm enough)! Then cut the agar into cubes and put in a bowl... traditionally, the chinese add sweetened syrup or almond milk over this along with mixed fruit. you could probably do the same with those carb cleaver fruit things or low carb milk sweetened with lc syrup. i personally like mine plain since its sweet enough with the sweetner added although the milky version is actually really nice!
cleanup kind of sucks though because unlike gelatin, agar sticks to your boiling pot!! -- if you use a nonstick surface you might be able to peel it off!
