These will melt in your mouth , you can omit the wine if you wish.
1/2 cup finely chopped white onion
1 stick butter
1 lb. scallops
1/2 cup dry white wine
1 tb. chopped parsley (fresh or dried)
1-1 1/2 cups fresh mushrooms
Fresh grated Parmesan Cheese
2 tsp. Olive Oil
1 tb. minced garlic
How To Prepare:
Prepare the onion butter first:
Take the finely chopped onions,garlic,olive oil,butter, parsley and saute' together until the onions are soft and translucent over medium heat.
Reduce the heat and add mushrooms and cook about 5 mins. or until browned.Add scallops,wine - simmer 5 mins until scallops are tender.
Preheat broiler and transfer the scallops & mixture to a shallow baking dish - sprinkle with generous amounts of frest Parmesan cheese. Broil until cheese is golden brown.
